These fried cheese curd patties, called sõrnikud, are a sour, salty, savory snack with a soft cheesy interior and a crispy fried crust. Sõrnikud came to Estonia from Russian and Ukrainian culinary traditions.

Ingredients
- ½ lb (250 g) curd cheese
- ½–¾ cups (60–90 g) flour
- 1 large egg
- 1 tsp (5 ml) caraway seeds
- 2 Tbsp (30 ml) sour cream
- Pinch of salt
- ¼ cup (30 or 40 g) semolina or fine breadcrumbs
- Vegetable oil, for frying
Directions
- In a large bowl, combine the curd cheese, flour, egg, caraway seeds, sour cream, and salt and mix thoroughly.
- Let the mixture stand for 15 minutes.
- With moistened hands, form the mixture into small patties.
- Dip the patties into the semolina or breadcrumbs.
- In a frying pan set over medium heat, heat the vegetable oil.
- Fry the patties until slightly golden, 3–5 minutes per side.
Notes
